Oggi mi sono cimentata in qualcosa di dolce! Nasce così la Ruby Caramel Apple Cake — una torta di mele con un caramello fatto in casa sul fondo, le meline disposte sopra e un impasto soffice e profumato con vaniglia, limone e alchermes. Un dolce che sorprende al primo morso, con quel tocco rubino che la rende unica. Perfetta per 10 persone — se arriva! 😄🍎

Ingredienti (10 persone)
3 Meline; 250g Zucchero; 313g Farina00 ; 125g Burro; 190-195g Latte intero (a temperatura ambiente); 2 Uova intere (a temperatura ambiente); 1 Limone (scorza abbondante); 16g Lievito in polvere per dolci; 3 cucchiaini di Vaniglia in polvere; 1 pizzico Sale fin; Alchermes q.b.;
Per il caramello: 40 g Zucchero ; Acqua q.b.
Procedimento
Macerazione: metti l’alchermes e la scorza di limone in una ciotolina e lascia macerare per almeno 1 ora. Questo passaggio è fondamentale per esaltare il profumo e il colore rubino! 💎
Prepara il caramello: in un pentolino metti lo zucchero e l’acqua e lascia bollire senza mescolare fino ad ottenere un caramello dorato. Versalo sul fondo della tortiera.
Pela e taglia le meline a fettine. Disponile sopra il caramello sul fondo della tortiera.
In una ciotola, lavora il burro morbido con lo zucchero fino ad ottenere un composto cremoso. Aggiungi le uova una alla volta e mescola bene.Aggiungi il latte, la vaniglia e il pizzico di sale. Poi versa l’alchermes macerato con la scorza di limone e mescola bene.Setaccia la farina e il lievito e incorporali al composto poco alla volta fino ad ottenere un impasto liscio e omogeneo. Aggiungi anche alcune fettine di mela nell’impasto.Versa l’impasto sulla tortiera sopra le mele e il caramello. Inforna a 180°C per circa 20 Min e poi a 160 per 30 minuti.Sforna, lascia raffreddare e capovolgi la torta sul piatto da portata per mostrare il caramello e le mele. Servi e gnam gnam! 🍎🍯

Ingredients (10 servings)
3 Small apples; 250g Sugar; 313g Plain flour (00); 125g Butter; 190-195g Whole milk (room temperature); 2 Whole eggs (room temperature); 1 Lemon (generous zest); 16g Baking powder; ⅝ tsp Vanilla powder; 1 pinch Fine salt; Alchermes to taste.
For the caramel: 40g Sugar; Water to taste.
Method
Maceration: place the alchermes and lemon zest in a small bowl and leave to macerate for at least 1 hour. This step is essential to enhance the aroma and ruby colour! 💎
Make the caramel: in a small saucepan add sugar and water and let it boil without stirring until you get a golden caramel. Pour it onto the bottom of the cake tin.
Peel and slice the apples. Arrange them on top of the caramel at the bottom of the tin.In a bowl, beat the soft butter with the sugar until creamy. Add the eggs one at a time and mix well.Add the milk, vanilla and a pinch of salt. Then pour in the macerated alchermes with the lemon zest and mix well.Sift the flour and baking powder and fold into the mixture little by little until you get a smooth and even batter. Add some apple slices into the batter too.Pour the batter into the tin over the apples and caramel. Bake at 180°C for about 20. minutes and the at 160° for 30 minutes. Remove from the oven, let it cool and flip the cake onto a serving plate to reveal the caramel and apples. Serve and yum yum! 🍎🍯
