Green Petal Turbot 🌿🌹

Questa volta mi sono voluto superare! Dopo il lavoro avevo voglia di qualcosa di raffinato ed elegante — ed è così che è nato il Green Petal Turbot. Un rombo cotto delicatamente con limone e menta, accompagnato dalla vera protagonista: una salsa vellutata verde alle erbe con panna, porro, erba cipollina e finocchietto, il tutto impreziosito da una spolverata di petali di rosa. Semplice nella tecnica, straordinario nel risultato. 🌿🌹

Ingredienti (2 persone)
1 Rombo
1 Limone (succo)
Menta fresca q.b.
½ Cipolla rossa
1 filo Olio extravergine di oliva
3 cucchiai Acqua
3 cucchiai Panna da cucina
Erba cipollina q.b.
½ Porro
Finocchietto q.b.
Prezzemolo q.b.
Petali di rosa q.b.
Sale q.b.
Pepe q.b.


Procedimento
In una padella scalda un filo d’olio a fuoco medio. Adagia il rombo e lascialo cuocere leggermente, poi giralo.
Versa il succo di limone con l’acqua, aggiungi la menta fresca e la cipolla rossa tagliata finemente. Continua la cottura bagnando il pesce con il fondo di cottura.
In un mixer frulla insieme la panna da cucina, l’erba cipollina, il porro, il finocchietto e il prezzemolo. Aggiusta di sale e pepe fino ad ottenere una salsa liscia e vellutata.
Aggiungi un pizzico di sale al pesce e termina la cottura a fuoco dolce.
Stendi uno strato di salsa verde nel piatto, adagia il rombo sopra e aggiungi un’altra cucchiaiata di salsa. Completa con una spolverata di petali di rosa. Servi subito! 🌿🌹

This time I wanted to push myself a little further! After work I was craving something refined and elegant — and that’s how the Green Petal Turbot was born. A turbot gently cooked with lemon and mint, paired with the real star of the dish: a velvety green herb sauce with cream, leek, chives and fennel, all finished with a sprinkle of rose petals. Simple in technique, extraordinary in result. 🌿🌹

Ingredients (2 servings)
1 Turbot
1 Lemon (juice)
Fresh mint to taste
½ Red onion
1 drizzle Extra virgin olive oil
3 tbsp Water
3 tbsp Cooking cream
Chives to taste
½ Leek
Fennel herb to taste
Parsley to taste
Rose petals to taste
Salt to taste
Pepper to taste

Method

Heat a drizzle of olive oil in a pan over medium heat. Place the turbot in the pan and cook gently, then flip it.Pour in the lemon juice with the water, add the fresh mint and finely chopped red onion. Continue cooking, basting the fish with the cooking juices.In a blender, blend together the cooking cream, chives, leek, fennel herb and parsley. Season with salt and pepper until you get a smooth and velvety green sauce.Add a pinch of salt to the fish and finish cooking over low heat.Spread a layer of green sauce on the plate, place the turbot on top and add another spoonful of sauce. Finish with a sprinkle of rose petals. Serve immediately! 🌿🌹
